Baking the perfect jacket potato is as much about luck as it is about planning and preparation. Sometimes even the best cooks just have to cross their fingers but, with the following tips, you can at least improve your chances of baking that perfect jacket spud! 1. Pre-heat your oven to gas mark gas mark 6, 400°F (200°C). Wash one large potato and dry thoroughly with a cloth. Prick the potato a couple of places with a fork then put on a few drops of olive oil and rub into the skin. Rub in some sea salt, to draw out the moisture from the skin, and then place on the middle shelf of the oven, preferably directly on the rack. Bake for around an 1 ½ - 1 ¾ hours depending on the size of the potatoes, or until the skins are really very crisp. Take out of the oven and serve immediately before losing its crispness. Enjoy!
